Preheat oven to 350 degrees f. line the bottom of two 8.5 x 4.5 inch loaf pans * with a piece of parchment paper. spray all over with cooking spray. add the sugar and butter to a mixing bowl and beat with an electric mixer until well combined. add eggs, pumpkin and vanilla and mix to combine.

Pumpkin Chocolate Chip Bread Recipe Cart Preheat oven to 350f. spray one 9×5 inch loaf pan with floured cooking spray, or grease and flour the pan; set aside. to a large bowl, add the the first eleven ingredients, through ground nutmeg, and whisk to combine. add the flour, baking powder, baking soda, salt, and stir until just combined; don’t overmix. In a large bowl, vigorously whisk the eggs with the remaining 3 4 cup (149g) sugar until the mixture is thick, pale, and voluminous, 1 to 2 minutes. gradually whisk in the oil and keep stirring until it’s shiny and emulsified, then add the pumpkin mixture and whisk to incorporate. add the flour mixture and whisk until combined. In a large bowl, whisk together flour, salt, baking powder, baking soda and pumpkin pie spice. set aside. in a medium bowl, whisk together pumpkin, brown sugar, granulated sugar, applesauce or oil, eggs, and vanilla extract. stir wet ingredients into dry ingredients, mixing just until moistened and combined. Turn mixer off. place the flour, baking soda, baking powder, salt, spices and chocolate chips into the bowl with the pumpkin mixture. mix just until the wet and dry ingredients are incorporated on low, scraping down sides of bowl a couple of times during process. pour the mixture into the prepared loaf pans.
